STUFF YER FACE: Freestyle Stuffed Peppers

I like to freestyle cook. I just fuck with whatever ingredients I have and whip up some concoctions that are usually pretty banging. I bought some nifty red peppers at a farmer’s market last week and today I was like damn I need to use these things before they go bad. So I decided to make stuffed peppers. A lot of times I like to use turkey sausage and/or cheese when I make stuffed peppers, but those weren’t on hand so I decided to rock with lentils and black beans, which I had soaking in seasoned water since the morning. I made some rice (use a rice cooker, the only way to go) and fried onions in olive oil. When the rice was done I added it to the pan with the onions, stir fried that shit up with a bunch of spices (coriander, red pepper, black pepper, fresh garlic, cumin, cinnamon, sea salt, smoked salt, prob more I forget) and added the beans. I shoved the rice mix in the peppers and threw em in the oven on 350 degrees for an hour or so. I also had an avocado from the farmers market so I decided to make a guac to go with the stuffed peppers, which was a simple blend of avocado, sriracha, greek yogurt and sea salt. It was mighty tasty and I scarfed it down and I still want more.
